The Miyazaki Prefectural Fisheries Experiment Station will begin selling caviar made from locally raised sturgeon on Nov. 22. The station has been researching aquaculture for 30 years in a public-private effort and is the first successful case in Japan of sturgeon being cultivated from egg to adult. The caviar will be harvested from sturgeon raised by 12 local fish farms and will go on sale first at Isetan’s flagship store in Shinjuku and the Miyazaki Caviar Producers’ Cooperative homepage.
